Birdie’s Pimento Cheese Sliders for game day!!

Truth be told, I’ve never been a fan of sliders. I mean it seems like a lot of work for a tiny hamburger, but delish.com published a recipe that changed my mind! You know I had to make little Birdie adjustments to turn up the yum and make it perfect for game day!

But, how about trying a little Birdie’s adjustment with me?!

2 tbsp extra-virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 lb ground beef
1 link, remove from casing or 1/4 lb of bulk chorizo sausage
1 tsp yellow mustard
1 tbsp Worcestershire sauce
salt/pepper
12 dinner rolls
8 oz Birdie’s Pimento Cheese, your flavor(s) of choice.
1/2 cup of sweet pickle relish
3 tbsp butter, melted

1 - Preheat oven to 350. In a large skillet over medium heat, heat oil and add onion. Cook until soft and translucent. Add the garlic and stir together until fragrant. Add the ground beef and chorizo sausage to the skillet. Break up the meat and continue to stir until no longer pink. Drain the fat.

2 - Add back to the skillet and stir in the yellow mustard and Worcestershire. Season with salt and pepper.

3 - Line a sheet pan with aluminum foil. Cut the dinner rolls in half, place the bottom half on the aluminum foil, top with beef mixture. Spoon on the Birdie’s Pimento Cheese of your choice. 

Feel free to use more than one flavor. I often have little bits of several flavors, and will dot on Jalapeño, Garlic Parmesan, and Cream Cheese + Black Pepper when I make this recipe.

4 - Top with sweet pickle relish and bun tops.

5 - Brush with melted butter. Close up the aluminum foil.

6 - Bake 10-15 mins.

7 - Remove from the foil to a large plate. You can pull them apart now or let your guests enjoy pulling them apart!  

But, y’know, I can’t leave well enough alone! Make your own adjustments or try these:

1 medium tomato, thin sliced; use a serrated knife to very thinly slice a tomato; top the pimento cheese

1/2 cup chopped raw onion; sprinkle over the pimento cheese

3 medium jalapeños; slice thinly, top the pimento cheese

1/2 cup BBQ sauce; drizzle over the pimento cheese

1/4 tsp garlic salt; add to the melted butter and brush the bun tops

bake without the aluminum foil for a toastier bun.
